Crunchy Chickpea Chicken Tenders
- ½ bag Saffron Road roasted chickpeas (any flavor!)
- 1 lb chicken tenders
- 2 eggs
- if using oven.. bake at 400*
- Remove any fat from chicken and set aside.
- Crack 2 eggs and whisk then adding salt and pepper.
- Add chickpeas to food processor until flour breadcrumb consistency.
- Dip chicken in egg wash mixture, coat chicken completely in crumbs, set in fryer or on baking sheet (with parchment paper) - cook in oven for 20-30 minutes (15-18 in air fryer
