It was the Maya who discovered the perfect way to make a tortilla in ancient times. The key is grinding the corn in a limestone container that releases calcium into the dough. This process, called nixtamalization, actually improves the protein structure of corn making it more nutritious. I'm diabetic. I don't eat meat or fish. And I live a very busy life so I depend on quick or frozen foods a lot. I just tried Enchiladas al Chipotle and while the food looked nothing like the picture on the box when I peeled off the film, it tasted wonderful. I plan to try all of Saffron Road's vegetarian options, but I think I'll like these enchiladas best. And for what it's worth, I suspect the reviewers that say this food doesn't taste "Mexican" enough are comparing it to so-called Mexican food you typically get at fast food restaurants in the U.S. I think these enchiladas, rice, and beans are perfect just the way they are. And I'm comparing them to what I ate in Cholula. Whatever you're doing, Saffron Road, please don't stop.

I bought this from Krogers store and picture looked tempting but the food had not much flavor of Mexican food. I will try other of their products but not this one.

The enchiladas were excellent. But the rice was unflavored white rice, and the beans were flavorless. I see the rice is said to be garlic, I could not taste it.

I am on a restricted diet and have a lot of food allergies. The Enchiladas Al Chipotle is very tasty, seasoned just right and doesn't taste like a store stocked item. Gluten free. I get protein from the black beans and cheese. I am allergic to poultry and restricted to certain meats. It is refreshing to be offered this food option. Thank you.

Used to be great, but the most recent purchase wasn't. The rice used to be long grain white rice but is now mushy short grain (brown?) rice, the tortilla fell apart (also mushy) and had little flavor, and the beans were hard almost to the point of inedibility. Seasoning was slightly different on everything. What happened?
